- Chicken thighs - 300 grams, boneless and skinless
- Fava beans - 200 grams, cooked and peeled
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Turmeric - 1/2 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Cilantro - 1/4 cup, chopped
- Lemon juice - 2 tablespoons
- Water - 250 milliliters
Steps
- Heat the olive oil in a tajine or heavy-bottomed pot over medium heat.
- Add the chopped onion and garlic, sautéing until the onion is translucent.
- Add the chicken thighs to the pot, browning them on all sides for about 5-7 minutes.
- Stir in the ground cumin, coriander, paprika, turmeric, salt, and black pepper, cooking for another 2 minutes until fragrant.
- Pour in the water and bring to a simmer, then cover and reduce the heat to low, cooking for 25 minutes.
- After 25 minutes, add the cooked fava beans to the pot and stir gently to combine.
- Cover again and cook for an additional 10 minutes, allowing the flavors to meld.
- Remove from heat, stir in the chopped cilantro and lemon juice before serving.
