Ingredients

  • Chicken thighs - 300 grams, boneless and skinless
  • Fava beans - 200 grams, cooked and peeled
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Turmeric - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Cilantro - 1/4 cup, chopped
  • Lemon juice - 2 tablespoons
  • Water - 250 milliliters

Steps

  1. Heat the olive oil in a tajine or heavy-bottomed pot over medium heat.
  2. Add the chopped onion and garlic, sautéing until the onion is translucent.
  3. Add the chicken thighs to the pot, browning them on all sides for about 5-7 minutes.
  4. Stir in the ground cumin, coriander, paprika, turmeric, salt, and black pepper, cooking for another 2 minutes until fragrant.
  5. Pour in the water and bring to a simmer, then cover and reduce the heat to low, cooking for 25 minutes.
  6. After 25 minutes, add the cooked fava beans to the pot and stir gently to combine.
  7. Cover again and cook for an additional 10 minutes, allowing the flavors to meld.
  8. Remove from heat, stir in the chopped cilantro and lemon juice before serving.
