- Zucchini - 1 medium, diced
- Carrot - 1 medium, sliced
- Red bell pepper - 1 medium, chopped
- Eggplant - 1 small, diced
- Chickpeas - 200 grams, cooked
- Tomato - 1 large, diced
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Cumin - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Turmeric - 1/2 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh coriander - 2 tablespoons, chopped
- Vegetable broth - 250 ml
- Lemon - 1, juiced
Steps
- In a tajine or heavy-bottomed pot, heat the olive oil over medium heat.
- Add the chopped onion and minced garlic. Sauté until the onion becomes translucent, about 5 minutes.
- Stir in the cumin, cinnamon, turmeric, paprika, salt, and black pepper. Cook for another 2 minutes to bloom the spices.
- Add the diced zucchini, sliced carrot, chopped red bell pepper, and diced eggplant to the pot. Stir well to coat the vegetables in the spices.
- Add the diced tomato and cooked chickpeas, followed by the vegetable broth. Bring the mixture to a gentle simmer.
- Cover the tajine and let it cook for about 25 minutes, or until the vegetables are tender.
- Remove the lid, stir in the fresh coriander and lemon juice, and adjust seasoning if necessary.
- Serve hot, garnished with additional fresh coriander if desired.
