Ingredients

  • Zucchini - 1 medium, diced
  • Carrot - 1 medium, sliced
  • Red bell pepper - 1 medium, chopped
  • Eggplant - 1 small, diced
  • Chickpeas - 200 grams, cooked
  • Tomato - 1 large, diced
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Cumin - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Turmeric - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh coriander - 2 tablespoons, chopped
  • Vegetable broth - 250 ml
  • Lemon - 1, juiced

Steps

  1. In a tajine or heavy-bottomed pot, heat the olive oil over medium heat.
  2. Add the chopped onion and minced garlic. Sauté until the onion becomes translucent, about 5 minutes.
  3. Stir in the cumin, cinnamon, turmeric, paprika, salt, and black pepper. Cook for another 2 minutes to bloom the spices.
  4. Add the diced zucchini, sliced carrot, chopped red bell pepper, and diced eggplant to the pot. Stir well to coat the vegetables in the spices.
  5. Add the diced tomato and cooked chickpeas, followed by the vegetable broth. Bring the mixture to a gentle simmer.
  6. Cover the tajine and let it cook for about 25 minutes, or until the vegetables are tender.
  7. Remove the lid, stir in the fresh coriander and lemon juice, and adjust seasoning if necessary.
  8. Serve hot, garnished with additional fresh coriander if desired.
