Ingredients

  • Chicken thighs - 400 grams, skin-on and bone-in
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 3 cloves, minced
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Turmeric - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Chicken broth - 250 ml
  • Green olives - 100 grams, pitted and halved
  • Cilantro - 2 tablespoons, chopped
  • Lemon - 1, juiced

Steps

  1. Heat the olive oil in a tajine or a heavy-bottomed pot over medium heat.
  2. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Stir in the minced garlic, cumin, coriander, paprika, turmeric, salt, and black pepper. Cook for another 2 minutes until fragrant.
  4. Add the chicken thighs to the pot, browning them on all sides for about 5-7 minutes.
  5. Pour in the chicken broth and bring to a simmer. Cover the pot and reduce the heat to low, cooking for 25 minutes.
  6. After 25 minutes, add the green olives to the pot. Stir gently to combine.
  7. Continue cooking, covered, for an additional 10 minutes.
  8. Remove from heat and stir in the lemon juice and chopped cilantro.
  9. Serve hot, garnished with additional cilantro if desired.
