- Chicken thighs - 400 grams, skin-on and bone-in
- Olive oil - 2 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 3 cloves, minced
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Turmeric - 1/2 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Chicken broth - 250 ml
- Green olives - 100 grams, pitted and halved
- Cilantro - 2 tablespoons, chopped
- Lemon - 1, juiced
Steps
- Heat the olive oil in a tajine or a heavy-bottomed pot over medium heat.
- Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic, cumin, coriander, paprika, turmeric, salt, and black pepper. Cook for another 2 minutes until fragrant.
- Add the chicken thighs to the pot, browning them on all sides for about 5-7 minutes.
- Pour in the chicken broth and bring to a simmer. Cover the pot and reduce the heat to low, cooking for 25 minutes.
- After 25 minutes, add the green olives to the pot. Stir gently to combine.
- Continue cooking, covered, for an additional 10 minutes.
- Remove from heat and stir in the lemon juice and chopped cilantro.
- Serve hot, garnished with additional cilantro if desired.
