- Chickpeas (canned) - 100 grams, drained and rinsed
- Tomato paste - 1 tablespoon
- Cinnamon - 1 teaspoon
- Cumin - 1 teaspoon
- Coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Water - 500 milliliters
- Fresh cilantro - for garnish
Steps
- Heat the olive oil in a tajine or heavy-bottomed pot over medium heat.
- Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic and cook for an additional minute until fragrant.
- Add the dried meat to the pot, browning it on all sides for about 5 minutes.
- Incorporate the sliced carrot, diced potato, and drained chickpeas, stirring to combine.
- Add the tomato paste, cinnamon, cumin, coriander, paprika, salt, and black pepper. Mix well to coat the ingredients.
- Pour in the water, ensuring that the meat and vegetables are submerged.
- Cover the pot and let it simmer on low heat for about 1 hour, or until the meat is tender.
- Once cooked, taste and adjust seasoning if necessary. Garnish with fresh cilantro before serving.
