Ingredients

  • Ground beef - 250 grams
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Zucchini - 1 medium, diced
  • Tomato - 1 large, diced
  • Chickpeas - 100 grams, cooked
  • Olive oil - 2 tablespoons
  • Paprika - 1 teaspoon
  • Cumin - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - a handful, chopped
  • Water - 150 ml

Steps

  1. In a tagine or a deep skillet, heat the olive oil over medium heat.
  2. Add the chopped onion and minced garlic, sautéing until the onion becomes translucent.
  3. Stir in the ground beef, breaking it up with a spoon, and cook until browned.
  4. Add the diced carrot and zucchini, stirring well to combine, and cook for about 5 minutes.
  5. Incorporate the diced tomato, cooked chickpeas, paprika, cumin, cinnamon, salt, and black pepper. Mix thoroughly.
  6. Pour in the water, cover the tagine or skillet, and reduce the heat to low. Let it simmer for about 25 minutes.
  7. Once cooked, remove from heat and stir in the chopped parsley before serving.
