- Zucchini - 1 medium, diced
- Tomato - 1 large, diced
- Chickpeas - 100 grams, cooked
- Olive oil - 2 tablespoons
- Paprika - 1 teaspoon
- Cumin - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - a handful, chopped
- Water - 150 ml
Steps
- In a tagine or a deep skillet, heat the olive oil over medium heat.
- Add the chopped onion and minced garlic, sautéing until the onion becomes translucent.
- Stir in the ground beef, breaking it up with a spoon, and cook until browned.
- Add the diced carrot and zucchini, stirring well to combine, and cook for about 5 minutes.
- Incorporate the diced tomato, cooked chickpeas, paprika, cumin, cinnamon, salt, and black pepper. Mix thoroughly.
- Pour in the water, cover the tagine or skillet, and reduce the heat to low. Let it simmer for about 25 minutes.
- Once cooked, remove from heat and stir in the chopped parsley before serving.
