- Carrot - 1 medium, sliced
- Potato - 1 medium, diced
- Zucchini - 1 medium, diced
- Tomato - 1 large, chopped
- Olive oil - 2 tablespoons
- Cumin - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Paprika - 1 teaspoon
- Turmeric - 1/2 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Cilantro - 2 tablespoons, chopped
- Water - 500 ml
Steps
- Heat the olive oil in a tajine or a heavy-bottomed pot over medium heat. Add the chopped onion and garlic, sautéing until translucent and fragrant.
- Add the lamb or beef chunks to the pot, browning them on all sides for about 5-7 minutes.
- Stir in the cumin, cinnamon, paprika, turmeric, salt, and black pepper, cooking for another minute until the spices are well combined with the meat.
- Add the chopped tomato, carrot, potato, and zucchini to the pot, mixing everything together.
- Pour in the water, ensuring all ingredients are submerged. Bring to a boil, then reduce heat to low and cover the pot.
- Simmer for about 60 minutes, stirring occasionally, until the meat is tender and the flavors meld together.
- Once cooked, sprinkle with chopped cilantro before serving.
