Ingredients
- Veal shoulder - 300g, cut into 2.5cm cubes
- Almonds - 50g, blanched
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Cinnamon - 1 teaspoon
- Ground ginger - 1 teaspoon
- Cumin - 1 teaspoon
- Turmeric - 1/2 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Dried apricots - 50g, chopped
- Chicken or vegetable broth - 300ml
- Fresh coriander - 2 tablespoons, chopped (for garnish)
Steps
- Heat olive oil in a tajine or heavy-bottomed pot over medium heat.
- Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic and cook for another minute until fragrant.
- Add the veal cubes to the pot and brown on all sides, about 8-10 minutes.
- Sprinkle the cinnamon, ground ginger, cumin, turmeric, salt, and black pepper over the meat, stirring to coat well.
- Add the chopped dried apricots and pour in the broth. Bring to a gentle simmer.
- Cover the tajine or pot and let it cook for 45 minutes on low heat, stirring occasionally.
- While the dish is cooking, toast the blanched almonds in a dry skillet over medium heat until golden brown, about 5 minutes. Set aside.
- After 45 minutes, check the veal for tenderness; if it's not tender, cook for an additional 10-15 minutes.
- Once cooked, remove from heat and stir in the toasted almonds.
- Serve hot, garnished with fresh coriander.
