Ingredients

  • Veal shoulder - 300 grams, cut into 2.5 cm cubes
  • Dried apricots - 100 grams, chopped
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Cinnamon stick - 1
  • Ground cumin - 1 teaspoon
  • Ground ginger - 1 teaspoon
  • Turmeric - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Chicken broth - 250 ml
  • Fresh cilantro - a handful, chopped for garnish
  • Toasted almonds - 30 grams, for garnish

Steps

  1. In a tajine or a heavy-bottomed pot, heat the olive oil over medium heat.
  2. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Stir in the minced garlic and cook for another minute until fragrant.
  4. Add the veal cubes and brown them on all sides, about 8-10 minutes.
  5. Sprinkle in the ground cumin, ground ginger, turmeric, salt, and black pepper, stirring well to coat the meat with the spices.
  6. Add the chopped dried apricots and the cinnamon stick, mixing everything together.
  7. Pour in the chicken broth, bringing the mixture to a gentle simmer.
  8. Cover the tajine or pot and reduce the heat to low, allowing it to cook for 40 minutes until the veal is tender.
  9. Once cooked, remove the cinnamon stick and garnish with chopped fresh cilantro and toasted almonds before serving.
