- Dried apricots - 100 grams, chopped
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Cinnamon stick - 1
- Ground cumin - 1 teaspoon
- Ground ginger - 1 teaspoon
- Turmeric - 1/2 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Chicken broth - 250 ml
- Fresh cilantro - a handful, chopped for garnish
- Toasted almonds - 30 grams, for garnish
Steps
- In a tajine or a heavy-bottomed pot, heat the olive oil over medium heat.
- Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic and cook for another minute until fragrant.
- Add the veal cubes and brown them on all sides, about 8-10 minutes.
- Sprinkle in the ground cumin, ground ginger, turmeric, salt, and black pepper, stirring well to coat the meat with the spices.
- Add the chopped dried apricots and the cinnamon stick, mixing everything together.
- Pour in the chicken broth, bringing the mixture to a gentle simmer.
- Cover the tajine or pot and reduce the heat to low, allowing it to cook for 40 minutes until the veal is tender.
- Once cooked, remove the cinnamon stick and garnish with chopped fresh cilantro and toasted almonds before serving.
