  • Cinnamon - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Vegetable broth - 250 ml
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon - 1, juiced
  • Almonds - 30 grams, toasted and chopped

Steps

  1. In a large tajine or heavy-bottomed pot, heat the truffle oil over medium heat.
  2. Add the chopped onion and garlic, sautéing until translucent, about 3-4 minutes.
  3. Stir in the sliced carrots and cook for another 5 minutes, stirring occasionally.
  4. Add the diced zucchini and chopped red bell pepper, cooking for an additional 5 minutes.
  5. Sprinkle the cumin, cinnamon, paprika, salt, and black pepper over the vegetables, stirring well to coat.
  6. Pour in the vegetable broth, and bring the mixture to a gentle simmer.
  7. Cover the tajine and let it cook for 20 minutes, stirring occasionally until the vegetables are tender.
  8. Add the cooked chickpeas and lemon juice, mixing well to combine.
  9. Cook for an additional 5 minutes, allowing the flavors to meld.
