  • Bell Pepper - 1 medium, diced
  • Zucchini - 1 medium, diced
  • Carrot - 1 medium, diced
  • Olive Oil - 2 tablespoons
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black Pepper - 1/2 teaspoon
  • Fresh Cilantro - 2 tablespoons, chopped
  • Vegetable Broth - 200 ml

Steps

  1. Heat olive oil in a tajine or a heavy-bottomed pot over medium heat.
  2. Add chopped onions and sauté until they become translucent, about 5 minutes.
  3. Stir in minced garlic and cook for an additional minute until fragrant.
  4. Add diced bell pepper, zucchini, and carrot to the pot, cooking for 5-7 minutes until they start to soften.

  6. Pour in the vegetable broth, stirring to combine all ingredients well.
  7. Cover the pot and let it simmer on low heat for 15-20 minutes, allowing the flavors to meld and the sauce to thicken.
