Ingredients

  • Chickpeas - 200 grams (cooked or canned)
  • Zucchini - 1 medium, diced
  • Carrot - 1 medium, sliced
  • Red bell pepper - 1 medium, chopped
  • Onion - 1 medium, finely chopped
  • Garlic - 3 cloves, minced
  • Tomato - 1 medium, chopped
  • Vegetable broth - 250 ml
  • Olive oil - 2 tablespoons
  • Fresh thyme - 2 teaspoons (or 1 teaspoon dried thyme)
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a large tajine or pot, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until the onion is translucent, about 5 minutes.
  2. Add the diced zucchini, sliced carrot, and chopped red bell pepper to the pot. Cook for another 5 minutes, stirring occasionally.
  3. Stir in the chopped tomato, cooked chickpeas, cumin, paprika, cinnamon, salt, and black pepper. Mix well to combine all ingredients.
  4. Pour in the vegetable broth and add the fresh thyme. Bring the mixture to a gentle simmer.
  5. Cover the tajine or pot and let it cook on low heat for 20-25 minutes, allowing the flavors to meld and the vegetables to become tender.
  6. Once cooked, taste and adjust seasoning if necessary. Serve hot, garnished with additional thyme if desired.
