- Chickpeas - 200 grams (cooked or canned)
- Zucchini - 1 medium, diced
- Carrot - 1 medium, sliced
- Red bell pepper - 1 medium, chopped
- Onion - 1 medium, finely chopped
- Garlic - 3 cloves, minced
- Tomato - 1 medium, chopped
- Vegetable broth - 250 ml
- Olive oil - 2 tablespoons
- Fresh thyme - 2 teaspoons (or 1 teaspoon dried thyme)
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
Steps
- In a large tajine or pot, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until the onion is translucent, about 5 minutes.
- Add the diced zucchini, sliced carrot, and chopped red bell pepper to the pot. Cook for another 5 minutes, stirring occasionally.
- Stir in the chopped tomato, cooked chickpeas, cumin, paprika, cinnamon, salt, and black pepper. Mix well to combine all ingredients.
- Pour in the vegetable broth and add the fresh thyme. Bring the mixture to a gentle simmer.
- Cover the tajine or pot and let it cook on low heat for 20-25 minutes, allowing the flavors to meld and the vegetables to become tender.
- Once cooked, taste and adjust seasoning if necessary. Serve hot, garnished with additional thyme if desired.
