  • Tomato - 1 medium, diced
  • Olive oil - 2 tablespoons
  • Vegetable broth - 250 ml
  • Cumin - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Coriander - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh coriander - for garnish
  • Lemon - 1, juiced

Steps

  1. In a large skillet or tajine, heat the olive oil over medium heat and sauté the chopped onions and minced garlic until translucent.
  2. Add the diced zucchini, carrot, and red bell pepper to the skillet, stirring occasionally for about 5 minutes.
  3. Stir in the diced tomato and cooked chickpeas, ensuring everything is well combined.
  4. Add the vegetable broth, cumin, cinnamon, coriander, salt, and black pepper. Bring to a gentle simmer.
