- Dried apricots - 100 grams
- Dates - 100 grams
- Almonds - 50 grams, chopped
- Cinnamon - 1 teaspoon
- Ground ginger - 1/2 teaspoon
- Cardamom pods - 4, crushed
- Water - 250 milliliters
- Maple syrup - 2 tablespoons
- Coconut oil - 1 tablespoon
- Fresh mint leaves - for garnish
Steps
- In a small bowl, soak the dried apricots and dates in warm water for 10 minutes to soften them.
- In a tajine or a medium pot, heat the coconut oil over medium heat.
- Add the chopped almonds to the pot and toast them until golden brown, about 3-4 minutes.
- Drain the soaked fruits and add them to the pot along with the cinnamon, ginger, and crushed cardamom pods.
- Pour in the water and maple syrup, then stir to combine all ingredients.
- Cover the tajine or pot and let it simmer on low heat for 15-20 minutes, stirring occasionally, until the fruits are soft and the mixture thickens.
- Remove from heat and let cool slightly before serving.
- Serve warm, garnished with fresh mint leaves.
