Ingredients

  • Dried apricots - 100 grams
  • Dates - 100 grams
  • Almonds - 50 grams, chopped
  • Cinnamon - 1 teaspoon
  • Ground ginger - 1/2 teaspoon
  • Cardamom pods - 4, crushed
  • Water - 250 milliliters
  • Maple syrup - 2 tablespoons
  • Coconut oil - 1 tablespoon
  • Fresh mint leaves - for garnish

Steps

  1. In a small bowl, soak the dried apricots and dates in warm water for 10 minutes to soften them.
  2. In a tajine or a medium pot, heat the coconut oil over medium heat.
  3. Add the chopped almonds to the pot and toast them until golden brown, about 3-4 minutes.
  4. Drain the soaked fruits and add them to the pot along with the cinnamon, ginger, and crushed cardamom pods.
  5. Pour in the water and maple syrup, then stir to combine all ingredients.
  6. Cover the tajine or pot and let it simmer on low heat for 15-20 minutes, stirring occasionally, until the fruits are soft and the mixture thickens.
  7. Remove from heat and let cool slightly before serving.
  8. Serve warm, garnished with fresh mint leaves.
