Ingredients

  • Cuttlefish - 400 grams, cleaned and cut into rings
  • Olive oil - 3 tablespoons
  • Red onion - 1 medium, finely chopped
  • Garlic - 3 cloves, minced
  • Bell pepper - 1 medium, diced
  • Tomato - 1 medium, diced
  • Green olives - 100 grams, pitted and sliced
  • Cilantro - 1/4 cup, chopped
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Turmeric - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Lemon - 1, juiced
  • Water - 200 ml

Steps

  1. In a large tajine or skillet, heat the olive oil over medium heat.
  2. Add the chopped red onion and minced garlic, sautéing until the onion is translucent.
  3. Stir in the diced bell pepper and tomato, cooking for another 5 minutes until softened.
  4. Add the cumin, paprika, turmeric, salt, and black pepper, stirring to combine.
  5. Add the cuttlefish rings to the pan, mixing well with the vegetables and spices.
  6. Pour in the water, bring to a simmer, then cover the tajine and reduce the heat to low.
  7. Let it cook for about 20 minutes, stirring occasionally until the cuttlefish is tender.
  8. Add the sliced green olives and chopped cilantro, mixing them in gently.
  9. Drizzle with lemon juice before serving, and enjoy your Tajine de Seiche.
