Ingredients

  • Salmon fillets - 300 grams
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, sliced
  • Zucchini - 1 medium, sliced
  • Bell pepper - 1 medium, diced
  • Tomatoes - 2 medium, chopped
  • Chickpeas - 100 grams, cooked
  • Cilantro - 2 tablespoons, chopped
  • Cumin - 1 teaspoon
  • Coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Lemon juice - 1 tablespoon
  • Water - 150 milliliters

Steps

  1. In a tajine or a large skillet, heat the olive oil over medium heat.
  2. Add the chopped onion and minced garlic, sautéing until the onion becomes translucent, about 5 minutes.
  3. Stir in the sliced carrot, zucchini, and bell pepper, cooking for another 5 minutes until the vegetables start to soften.
  4. Add the chopped tomatoes, cooked chickpeas, cumin, coriander, paprika, salt, and black pepper. Mix well and let it cook for 2-3 minutes.
  5. Pour in the water and bring the mixture to a simmer. Cover and cook for 10 minutes, allowing the vegetables to cook through.
  6. Gently place the salmon fillets on top of the vegetable mixture, drizzling with lemon juice. Cover and cook for an additional 10-12 minutes, or until the salmon is cooked through and flakes easily.
  7. Remove from heat and sprinkle with fresh cilantro before serving.
