- Garlic - 2 cloves, minced
- Carrot - 1 medium, sliced
- Zucchini - 1 medium, sliced
- Bell pepper - 1 medium, diced
- Tomatoes - 2 medium, chopped
- Chickpeas - 100 grams, cooked
- Cilantro - 2 tablespoons, chopped
- Cumin - 1 teaspoon
- Coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Lemon juice - 1 tablespoon
- Water - 150 milliliters
Steps
- In a tajine or a large skillet, heat the olive oil over medium heat.
- Add the chopped onion and minced garlic, sautéing until the onion becomes translucent, about 5 minutes.
- Stir in the sliced carrot, zucchini, and bell pepper, cooking for another 5 minutes until the vegetables start to soften.
- Add the chopped tomatoes, cooked chickpeas, cumin, coriander, paprika, salt, and black pepper. Mix well and let it cook for 2-3 minutes.
- Pour in the water and bring the mixture to a simmer. Cover and cook for 10 minutes, allowing the vegetables to cook through.
- Gently place the salmon fillets on top of the vegetable mixture, drizzling with lemon juice. Cover and cook for an additional 10-12 minutes, or until the salmon is cooked through and flakes easily.
- Remove from heat and sprinkle with fresh cilantro before serving.
