  • Chickpeas - 200 grams, cooked or canned, drained and rinsed
  • Tomato - 1 medium, chopped
  • Fresh sage leaves - 10 grams, chopped
  • Cinnamon - 1/2 teaspoon
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Vegetable broth - 250 milliliters
  • Couscous or quinoa - 100 grams (for serving)

Steps

  1. Heat the olive oil in a tajine or a large saucepan over medium heat.
  2. Add the diced onion and sauté for about 5 minutes until translucent.
  3. Stir in the minced garlic and cook for another minute until fragrant.
  4. Add the sliced carrot and cook for 5 more minutes, stirring occasionally.
  5. Incorporate the diced zucchini and bell pepper, cooking for an additional 5 minutes.
  6. Add the cooked chickpeas, chopped tomato, and fresh sage to the pan.
  7. Sprinkle in the cinnamon, cumin, paprika, salt, and black pepper, mixing well.
  8. Pour in the vegetable broth and bring the mixture to a gentle simmer.
  9. Cover the tajine or saucepan and let it cook for about 20 minutes, stirring occasionally until the vegetables are tender.
  10. While the tajine is cooking, prepare the couscous or quinoa according to package instructions.
  11. Serve the hot tajine over the couscous or quinoa, garnished with additional sage leaves if desired.
