- Black pepper - to taste
- Vegetable broth - 250 milliliters
- Couscous or quinoa - 100 grams (for serving)
Steps
- Heat the olive oil in a tajine or a large saucepan over medium heat.
- Add the diced onion and sauté for about 5 minutes until translucent.
- Stir in the minced garlic and cook for another minute until fragrant.
- Add the sliced carrot and cook for 5 more minutes, stirring occasionally.
- Incorporate the diced zucchini and bell pepper, cooking for an additional 5 minutes.
- Add the cooked chickpeas, chopped tomato, and fresh sage to the pan.
- Sprinkle in the cinnamon, cumin, paprika, salt, and black pepper, mixing well.
