- Cumin powder - 1 teaspoon

Steps
- Heat the olive oil in a tajine or a heavy-bottomed pot over medium heat.
- Add the chopped onion and minced garlic, sautéing until the onion becomes translucent.
- Add the Merguez sausages to the pot, browning them on all sides for about 5 minutes.
- Stir in the diced zucchini, bell pepper, and tomato, cooking for another 5 minutes until the vegetables begin to soften.
- Sprinkle the cumin, paprika, turmeric, salt, and pepper over the mixture, stirring to combine well.
- Reduce the heat to low, cover the pot, and let it simmer for about 20 minutes until the sausages are cooked through and the vegetables are tender.
- Serve hot, garnished with fresh parsley.
