Ingredients

  • Merguez sausages - 300 grams
  • Zucchini - 1 medium, diced
  • Bell pepper (red or yellow) - 1 medium, diced
  • Tomato - 1 large, diced
  • Onion - 1 medium, chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Cumin powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Turmeric - 1/2 teaspoon
  • Salt - to taste
  • Pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. Heat the olive oil in a tajine or a heavy-bottomed pot over medium heat.
  2. Add the chopped onion and minced garlic, sautéing until the onion becomes translucent.
  3. Add the Merguez sausages to the pot, browning them on all sides for about 5 minutes.
  4. Stir in the diced zucchini, bell pepper, and tomato, cooking for another 5 minutes until the vegetables begin to soften.
  5. Sprinkle the cumin, paprika, turmeric, salt, and pepper over the mixture, stirring to combine well.
  6. Reduce the heat to low, cover the pot, and let it simmer for about 20 minutes until the sausages are cooked through and the vegetables are tender.
  7. Serve hot, garnished with fresh parsley.
