  • Zucchini - 150 grams
  • Carrots - 100 grams
  • Red bell pepper - 100 grams
  • Chickpeas (cooked) - 200 grams
  • Tomato - 150 grams
  • Onion - 1 medium
  • Garlic - 2 cloves
  • Saffron threads - 1/4 teaspoon
  • Olive oil - 2 tablespoons
  • Cumin powder - 1 teaspoon
  • Cinnamon powder - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Vegetable broth - 250 milliliters
  • Fresh cilantro - for garnish

Steps

  1. Chop the zucchini, carrots, red bell pepper, and tomato into bite-sized pieces. Finely chop the onion and garlic.
  2. In a tajine or a heavy-bottomed pot, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until translucent.
  3. Add the cumin, cinnamon, salt, and black pepper, stirring for about 1 minute to release the spices' aromas.
  4. Stir in the chopped zucchini, carrots, and red bell pepper. Cook for 5-7 minutes until the vegetables begin to soften.
  5. Add the cooked chickpeas, diced tomato, and saffron threads to the pot. Pour in the vegetable broth and stir to combine.
  6. Cover the tajine or pot and simmer on low heat for 20-25 minutes, allowing the flavors to meld together and the vegetables to become tender.
  7. Once cooked, remove from heat and let it sit for a few minutes. Garnish with fresh cilantro before serving.
