- Zucchini - 150 grams
- Carrots - 100 grams
- Red bell pepper - 100 grams
- Chickpeas (cooked) - 200 grams
- Tomato - 150 grams
- Onion - 1 medium
- Garlic - 2 cloves
- Saffron threads - 1/4 teaspoon
- Olive oil - 2 tablespoons
- Cumin powder - 1 teaspoon
- Cinnamon powder - 1/2 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Vegetable broth - 250 milliliters
- Fresh cilantro - for garnish
Steps
- Chop the zucchini, carrots, red bell pepper, and tomato into bite-sized pieces. Finely chop the onion and garlic.
- In a tajine or a heavy-bottomed pot, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until translucent.
- Add the cumin, cinnamon, salt, and black pepper, stirring for about 1 minute to release the spices' aromas.
- Stir in the chopped zucchini, carrots, and red bell pepper. Cook for 5-7 minutes until the vegetables begin to soften.
- Add the cooked chickpeas, diced tomato, and saffron threads to the pot. Pour in the vegetable broth and stir to combine.
- Cover the tajine or pot and simmer on low heat for 20-25 minutes, allowing the flavors to meld together and the vegetables to become tender.
- Once cooked, remove from heat and let it sit for a few minutes. Garnish with fresh cilantro before serving.
