- Red mullet fillets - 300 grams
- Olive oil - 2 tablespoons
- Onion - 1 medium, thinly sliced
- Garlic - 3 cloves, minced
- Red bell pepper - 1, sliced
- Zucchini - 1 medium, diced
- Tomatoes - 2 medium, chopped
- Cilantro - 2 tablespoons, chopped
- Parsley - 2 tablespoons, chopped
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Turmeric - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
- Lemon - 1, juiced
- Water - 200 ml
Steps
- Heat olive oil in a tajine or a deep skillet over medium heat.
- Add the sliced onion and sauté until soft and translucent, about 5 minutes.
- Stir in the minced garlic, red bell pepper, and zucchini, cooking for another 5 minutes until slightly tender.
- Add the chopped tomatoes, cumin, paprika, turmeric, salt, and black pepper. Cook for 5 more minutes, allowing the tomatoes to break down.
- Place the red mullet fillets on top of the vegetable mixture, and sprinkle with cilantro and parsley.
- Pour the lemon juice and water over the fish and vegetables, cover, and simmer on low heat for 15-20 minutes, until the fish is cooked through.
- Serve hot, garnished with additional chopped herbs if desired.
