- Chickpeas - 200 grams (cooked)
- Carrot - 1 medium, sliced
- Zucchini - 1 medium, diced
- Red bell pepper - 1, diced
- Onion - 1 medium, chopped
- Garlic - 3 cloves, minced
- Fresh rosemary - 2 sprigs, chopped
- Cumin - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Olive oil - 2 tablespoons
- Vegetable broth - 200 ml
- Salt - to taste
- Black pepper - to taste
- Lemon juice - 1 tablespoon
Steps
- In a medium pot, heat olive oil over medium heat. Add chopped onion and minced garlic, sautéing until the onion becomes translucent.
- Add carrot slices, zucchini, and red bell pepper to the pot. Cook for about 5 minutes, stirring occasionally.
- Stir in the cooked chickpeas, chopped rosemary, cumin, cinnamon, salt, and black pepper. Mix well to combine all ingredients.
- Pour in the vegetable broth, bring to a simmer, and cover the pot. Let it cook for 20 minutes, stirring occasionally.
- Once the vegetables are tender, remove the lid and allow the mixture to cook for an additional 5 minutes to thicken.
- Remove from heat and stir in lemon juice before serving.
