Ingredients

  • Chickpeas - 200 grams (cooked)
  • Carrot - 1 medium, sliced
  • Zucchini - 1 medium, diced
  • Red bell pepper - 1, diced
  • Onion - 1 medium, chopped
  • Garlic - 3 cloves, minced
  • Fresh rosemary - 2 sprigs, chopped
  • Cumin - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Olive oil - 2 tablespoons
  • Vegetable broth - 200 ml
  • Salt - to taste
  • Black pepper - to taste
  • Lemon juice - 1 tablespoon

Steps

  1. In a medium pot, heat olive oil over medium heat. Add chopped onion and minced garlic, sautéing until the onion becomes translucent.
  2. Add carrot slices, zucchini, and red bell pepper to the pot. Cook for about 5 minutes, stirring occasionally.
  3. Stir in the cooked chickpeas, chopped rosemary, cumin, cinnamon, salt, and black pepper. Mix well to combine all ingredients.
  4. Pour in the vegetable broth, bring to a simmer, and cover the pot. Let it cook for 20 minutes, stirring occasionally.
  5. Once the vegetables are tender, remove the lid and allow the mixture to cook for an additional 5 minutes to thicken.
  6. Remove from heat and stir in lemon juice before serving.
