Ingredients

  • Basmati rice - 150 grams
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Zucchini - 1 medium, diced
  • Red bell pepper - 1 medium, diced
  • Chickpeas - 200 grams, cooked or canned, rinsed
  • Tomato - 1 medium, diced
  • Vegetable broth - 500 ml
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon - 1, juiced

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it for 20 minutes.
  2. In a tajine or a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic and cook for another minute, until fragrant.
  4. Stir in the diced carrot, zucchini, and red bell pepper. Cook for 5-7 minutes, stirring occasionally, until the vegetables start to soften.
  5. Add the chickpeas, diced tomato, ground cumin, ground coriander, paprika, and season with salt and pepper. Mix well.
  6. Drain the soaked rice and add it to the vegetable mixture, stirring to combine.
  7. Pour in the vegetable broth, bring to a boil, then reduce the heat to low. Cover and simmer for 15-20 minutes, or until the rice is cooked and has absorbed the liquid.
  8. Remove from heat and let it sit, covered, for 5 minutes. Fluff the rice with a fork.
  9. Stir in fresh parsley and lemon juice before serving.
