- Basmati rice - 150 grams
- Olive oil - 2 tablespoons
- Onion - 1 medium, diced
- Garlic - 2 cloves, minced
- Carrot - 1 medium, diced
- Zucchini - 1 medium, diced
- Red bell pepper - 1 medium, diced
- Chickpeas - 200 grams, cooked or canned, rinsed
- Tomato - 1 medium, diced
- Vegetable broth - 500 ml
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - 2 tablespoons, chopped
- Lemon - 1, juiced
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it for 20 minutes.
- In a tajine or a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and cook for another minute, until fragrant.
- Stir in the diced carrot, zucchini, and red bell pepper. Cook for 5-7 minutes, stirring occasionally, until the vegetables start to soften.
- Add the chickpeas, diced tomato, ground cumin, ground coriander, paprika, and season with salt and pepper. Mix well.
- Drain the soaked rice and add it to the vegetable mixture, stirring to combine.
- Pour in the vegetable broth, bring to a boil, then reduce the heat to low. Cover and simmer for 15-20 minutes, or until the rice is cooked and has absorbed the liquid.
- Remove from heat and let it sit, covered, for 5 minutes. Fluff the rice with a fork.
- Stir in fresh parsley and lemon juice before serving.
