  • Carrot - 1 medium, diced
  • Zucchini - 1 medium, diced
  • Bell pepper - 1 medium, diced
  • Chickpeas - 200 grams, cooked or canned, drained
  • Dried raisins - 100 grams
  • Cinnamon - 1 teaspoon
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Vegetable broth - 250 ml
  • Fresh parsley - for garnish

Steps

  1. Heat the olive oil in a medium-sized pot over medium heat.
  2. Add the chopped onion and sauté for 3-4 minutes until translucent.
  3. Stir in the minced garlic and cook for another minute until fragrant.
  4. Add the diced carrot, zucchini, and bell pepper, and cook for 5-6 minutes, stirring occasionally.
  5. Mix in the cooked chickpeas, dried raisins, cinnamon, cumin, coriander, salt, and black pepper.
  6. Pour the vegetable broth into the pot and bring to a simmer.
  7. Cover the pot and let it cook for 10-15 minutes, allowing the flavors to meld and the vegetables to become tender.
  8. Remove from heat and garnish with fresh parsley before serving.
