- Dried raisins - 100 grams
- Cinnamon - 1 teaspoon
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Vegetable broth - 250 ml
- Fresh parsley - for garnish
Steps
- Heat the olive oil in a medium-sized pot over medium heat.
- Add the chopped onion and sauté for 3-4 minutes until translucent.
- Stir in the minced garlic and cook for another minute until fragrant.
- Add the diced carrot, zucchini, and bell pepper, and cook for 5-6 minutes, stirring occasionally.

- Cover the pot and let it cook for 10-15 minutes, allowing the flavors to meld and the vegetables to become tender.
