Ingredients

  • Radishes - 300 grams, halved
  • Olive oil - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Onion - 1 medium, finely chopped
  • Carrot - 1 medium, sliced
  • Zucchini - 1 medium, diced
  • Red bell pepper - 1, chopped
  • Vegetable broth - 250 ml
  • Cumin - 1 teaspoon
  • Coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon

Steps

  1. Heat the olive oil in a tajine or a large skillet over medium heat.
  2. Add the chopped onion and minced garlic, sautéing until the onion is translucent, about 5 minutes.
  3. Stir in the sliced carrot and cook for another 5 minutes until it starts to soften.
  4. Add the halved radishes, diced zucchini, and chopped red bell pepper, stirring well to combine.
  5. Sprinkle in the cumin, coriander, paprika, salt, and black pepper, mixing thoroughly to coat the vegetables.
  6. Pour in the vegetable broth, cover the tajine or skillet, and simmer for 20-25 minutes, or until the radishes and other vegetables are tender.
  7. Remove from heat and stir in the fresh parsley and lemon juice before serving.
