Steps

  1. In a tajine or a deep skillet, heat the olive oil over medium heat.
  2. Add the chopped onion and minced garlic, sautéing until the onion is translucent, about 5 minutes.
  3. Stir in the diced carrot and red bell pepper, cooking for another 5 minutes until softened.
  4. Add the cumin, cinnamon, and turmeric, stirring well to coat the vegetables with the spices.
