- Red bell pepper - 1 medium, diced
- Cinnamon - 1 teaspoon
- Cumin - 1 teaspoon
- Coriander - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Vegetable broth - 300 ml
- Fresh cilantro - for garnish
Steps
- In a medium-sized pot, heat the olive oil over medium heat and sauté the diced onion and minced garlic until translucent.
- Add the diced carrot, zucchini, and red bell pepper, and cook for another 5 minutes, stirring occasionally.
- Stir in the prunes, cinnamon, cumin, coriander, salt, and black pepper, mixing well to combine all the flavors.
- Pour in the vegetable broth and bring the mixture to a boil. Reduce heat and let it simmer for about 15 minutes until the vegetables are tender.
- While the vegetables are simmering, prepare the couscous by placing it in a bowl and pouring boiling water over it, covering it with a lid for 5 minutes until fluffy.
- Once the vegetable mixture is ready, serve it over the couscous and garnish with fresh cilantro.
