Ingredients

  • Prunes - 200 grams
  • Couscous - 100 grams
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Zucchini - 1 medium, diced
  • Red bell pepper - 1 medium, diced
  • Cinnamon - 1 teaspoon
  • Cumin - 1 teaspoon
  • Coriander - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Vegetable broth - 300 ml
  • Fresh cilantro - for garnish

Steps

  1. In a medium-sized pot, heat the olive oil over medium heat and sauté the diced onion and minced garlic until translucent.
  2. Add the diced carrot, zucchini, and red bell pepper, and cook for another 5 minutes, stirring occasionally.
  3. Stir in the prunes, cinnamon, cumin, coriander, salt, and black pepper, mixing well to combine all the flavors.
  4. Pour in the vegetable broth and bring the mixture to a boil. Reduce heat and let it simmer for about 15 minutes until the vegetables are tender.
  5. While the vegetables are simmering, prepare the couscous by placing it in a bowl and pouring boiling water over it, covering it with a lid for 5 minutes until fluffy.
  6. Once the vegetable mixture is ready, serve it over the couscous and garnish with fresh cilantro.
