Ingredients

  • Octopus - 400 grams, cleaned and cut into pieces
  • Olive oil - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Onion - 1 medium, finely chopped
  • Red bell pepper - 1, diced
  • Tomato - 1 large, diced
  • Carrot - 1 medium, sliced
  • Cilantro - 2 tablespoons, chopped
  • Parsley - 2 tablespoons, chopped
  • Paprika - 1 teaspoon
  • Cumin - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Lemon juice - 2 tablespoons
  • Water - 300 ml

Steps

  1. In a tajine or a heavy-bottomed pot, heat the olive oil over medium heat.
  2. Add the chopped onion and minced garlic, sautéing until the onion is translucent.
  3. Stir in the diced red bell pepper, tomato, and carrot, cooking for an additional 5 minutes.
  4. Add the paprika, cumin, cinnamon, salt, and black pepper, mixing well to combine the spices with the vegetables.
  5. Incorporate the octopus pieces into the pot, stirring to coat them with the spice mixture.
  6. Pour in the water and bring the mixture to a gentle simmer.
  7. Cover the tajine with its lid and let it cook for about 40 minutes, or until the octopus is tender.
  8. Once cooked, stir in the chopped cilantro, parsley, and lemon juice, adjusting seasoning if necessary.
