Ingredients

  • Chicken thighs - 400 grams
  • Preserved lemons - 1, quartered
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - ½ teaspoon
  • Fresh cilantro - 2 tablespoons, chopped
  • Water - 200 milliliters

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a large mixing bowl, combine the chicken thighs with olive oil, minced garlic, cumin, coriander, paprika, salt, and black pepper. Mix well to coat the chicken evenly.
  3. In a tagine or oven-safe dish, layer the chopped onions at the bottom.
  4. Place the marinated chicken on top of the onions, and then add the quartered preserved lemons around the chicken.
  5. Pour the water into the dish, cover with a lid or aluminum foil, and bake in the preheated oven for 45 minutes.
  6. After 45 minutes, remove the cover and bake for an additional 15 minutes to allow the chicken to brown slightly.
  7. Once cooked, garnish with fresh cilantro and serve hot with couscous or crusty bread.
