- Chicken thighs - 400 grams
- Preserved lemons - 1, quartered
- Olive oil - 2 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - ½ teaspoon
- Fresh cilantro - 2 tablespoons, chopped
- Water - 200 milliliters
Steps
- Preheat the oven to 180°C (350°F).
- In a large mixing bowl, combine the chicken thighs with olive oil, minced garlic, cumin, coriander, paprika, salt, and black pepper. Mix well to coat the chicken evenly.
- In a tagine or oven-safe dish, layer the chopped onions at the bottom.
- Place the marinated chicken on top of the onions, and then add the quartered preserved lemons around the chicken.
- Pour the water into the dish, cover with a lid or aluminum foil, and bake in the preheated oven for 45 minutes.
- After 45 minutes, remove the cover and bake for an additional 15 minutes to allow the chicken to brown slightly.
- Once cooked, garnish with fresh cilantro and serve hot with couscous or crusty bread.
