Ingredients

  • Chicken thighs - 300 grams
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, sliced
  • Zucchini - 1 medium, sliced
  • Red bell pepper - 1 medium, diced
  • Tomato - 1 medium, chopped
  • Chickpeas - 100 grams, canned and drained
  • Chicken broth - 250 ml
  • Ground cumin - 1 teaspoon
  • Ground cinnamon - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh cilantro - 2 tablespoons, chopped
  • Lemon - 1, juiced

Steps

  1. Heat the olive oil in a tajine or a heavy-bottomed pot over medium heat.
  2. Add the diced onion and minced garlic, sauté until the onion becomes translucent.
  3. Add the chicken thighs to the pot and brown them on all sides for about 5-7 minutes.
  4. Stir in the sliced carrot, zucchini, and diced red bell pepper, cooking for another 5 minutes.
  5. Add the chopped tomato, chickpeas, chicken broth, cumin, cinnamon, paprika, salt, and black pepper. Stir well to combine.
  6. Cover the tajine or pot and reduce the heat to low. Let it simmer for about 25-30 minutes, or until the chicken is cooked through and tender.
  7. Once cooked, stir in the lemon juice and chopped cilantro just before serving.
  8. Serve hot with whole grain bread or brown rice.
