- Chicken thighs - 300 grams
- Olive oil - 2 tablespoons
- Onion - 1 medium, diced
- Garlic - 2 cloves, minced
- Carrot - 1 medium, sliced
- Zucchini - 1 medium, sliced
- Red bell pepper - 1 medium, diced
- Tomato - 1 medium, chopped
- Chickpeas - 100 grams, canned and drained
- Chicken broth - 250 ml
- Ground cumin - 1 teaspoon
- Ground cinnamon - 1/2 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh cilantro - 2 tablespoons, chopped
- Lemon - 1, juiced
Steps
- Heat the olive oil in a tajine or a heavy-bottomed pot over medium heat.
- Add the diced onion and minced garlic, sauté until the onion becomes translucent.
- Add the chicken thighs to the pot and brown them on all sides for about 5-7 minutes.
- Stir in the sliced carrot, zucchini, and diced red bell pepper, cooking for another 5 minutes.
- Add the chopped tomato, chickpeas, chicken broth, cumin, cinnamon, paprika, salt, and black pepper. Stir well to combine.
- Cover the tajine or pot and reduce the heat to low. Let it simmer for about 25-30 minutes, or until the chicken is cooked through and tender.
- Once cooked, stir in the lemon juice and chopped cilantro just before serving.
- Serve hot with whole grain bread or brown rice.
