- Chickpeas - 200 grams, cooked or canned, drained
- Carrot - 1 medium, sliced
- Zucchini - 1 medium, sliced
- Red bell pepper - 1 medium, chopped
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Vegetable broth - 250 milliliters
- Ground cumin - 1 teaspoon
- Ground cinnamon - 1/2 teaspoon
- Ground turmeric - 1/2 teaspoon
- Paprika - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh cilantro - for garnish
Steps
- In a large tajine or deep skillet, heat the olive oil over medium heat.
- Add the chopped onion and minced garlic, sautéing until translucent, about 5 minutes.
- Stir in the sliced carrot, zucchini, and red bell pepper, cooking for another 5 minutes until slightly softened.
- Add the cubed pumpkin, chickpeas, and all the spices (cumin, cinnamon, turmeric, paprika, salt, and black pepper). Mix well to coat the vegetables in the spices.
- Pour in the vegetable broth, bringing the mixture to a gentle simmer.
- Cover the tajine or skillet and reduce the heat to low. Let it cook for 25-30 minutes, or until the pumpkin is tender.
- Once cooked, remove from heat and let it rest for 5 minutes.
- Serve warm, garnished with fresh cilantro.
