- Garlic - 2 cloves, minced
- Carrot - 1 medium, sliced
- Zucchini - 1 medium, diced
- Bell pepper - 1 medium, diced
- Tomato - 1 medium, chopped
- Cumin - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Lemon - 1, juiced
Steps
- Heat the olive oil in a tajine or a heavy-bottomed pot over medium heat.
- Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic and cook for another minute until fragrant.
- Add the pork cubes to the pot and brown on all sides, about 10 minutes.
- Sprinkle the cumin, cinnamon, paprika, salt, and black pepper over the pork, stirring to coat evenly.
- Add the sliced carrot, diced zucchini, diced bell pepper, and chopped tomato to the pot.
- Pour in a splash of water (about 50 ml) to help create steam, cover, and reduce the heat to low.
- Let the mixture simmer for about 25 minutes, stirring occasionally, until the pork is tender and the vegetables are cooked through.
- Finish with fresh parsley and lemon juice, stirring to combine.
- Serve warm, garnished with additional parsley if desired.
