Ingredients

  • Pork shoulder - 300 grams, cut into 2.5 cm cubes
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, sliced
  • Zucchini - 1 medium, diced
  • Bell pepper - 1 medium, diced
  • Tomato - 1 medium, chopped
  • Cumin - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon - 1, juiced

Steps

  1. Heat the olive oil in a tajine or a heavy-bottomed pot over medium heat.
  2. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Stir in the minced garlic and cook for another minute until fragrant.
  4. Add the pork cubes to the pot and brown on all sides, about 10 minutes.
  5. Sprinkle the cumin, cinnamon, paprika, salt, and black pepper over the pork, stirring to coat evenly.
  6. Add the sliced carrot, diced zucchini, diced bell pepper, and chopped tomato to the pot.
  7. Pour in a splash of water (about 50 ml) to help create steam, cover, and reduce the heat to low.
  8. Let the mixture simmer for about 25 minutes, stirring occasionally, until the pork is tender and the vegetables are cooked through.
  9. Finish with fresh parsley and lemon juice, stirring to combine.
  10. Serve warm, garnished with additional parsley if desired.
