- Coriander - 1 teaspoon

- Paprika - 1 teaspoon

- Black pepper - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Vegetable or chicken broth - 250 ml
- Lemon juice - 1 tablespoon
Steps
- Peel and cut the potatoes into bite-sized cubes.
- In a tajine or heavy-bottomed pot, heat the olive oil over medium heat.
- Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic and cook for an additional minute.
- Add the diced red bell pepper and carrot, cooking for another 5 minutes until softened.
- Sprinkle in the cumin, coriander, turmeric, paprika, salt, and black pepper, stirring well to coat the vegetables with the spices.
- Add the cubed potatoes and mix them thoroughly with the spiced vegetables.
- Pour in the vegetable or chicken broth and bring to a simmer.
- Cover the tajine or pot and reduce the heat to low. Cook for 20-25 minutes or until the potatoes are tender.
- Once cooked, remove from heat and stir in the lemon juice and fresh parsley before serving.
