  • Medium potatoes - 300 grams

  • Red bell pepper - 1 medium, diced
  • Carrot - 1 medium, diced
  • Cumin - 1 teaspoon
  • Coriander - 1 teaspoon
  • Turmeric - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Vegetable or chicken broth - 250 ml
  • Lemon juice - 1 tablespoon

Steps

  1. Peel and cut the potatoes into bite-sized cubes.
  2. In a tajine or heavy-bottomed pot, heat the olive oil over medium heat.
  3. Add the chopped onion and sauté until translucent, about 5 minutes.
  4. Stir in the minced garlic and cook for an additional minute.
  5. Add the diced red bell pepper and carrot, cooking for another 5 minutes until softened.
  6. Sprinkle in the cumin, coriander, turmeric, paprika, salt, and black pepper, stirring well to coat the vegetables with the spices.
  7. Add the cubed potatoes and mix them thoroughly with the spiced vegetables.
  8. Pour in the vegetable or chicken broth and bring to a simmer.
  9. Cover the tajine or pot and reduce the heat to low. Cook for 20-25 minutes or until the potatoes are tender.
  10. Once cooked, remove from heat and stir in the lemon juice and fresh parsley before serving.
