- Carrot - 1 medium, sliced
- Tomato - 1 medium, chopped
- Olive oil - 2 tablespoons
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Ground ginger - 1 teaspoon
- Turmeric - 1/2 teaspoon
- Cinnamon - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - a handful, chopped
- Water - 500 milliliters
Steps
- In a tajine or heavy pot, heat olive oil over medium heat.
- Add the chopped onion and minced garlic, sautéing until soft and translucent.
- Add the meat cubes to the pot, browning them on all sides.
- Stir in the ground cumin, coriander, ginger, turmeric, cinnamon, salt, and pepper, mixing well to coat the meat in the spices.
- Add the chopped tomato and sliced carrot, cooking for another 5 minutes.
- Pour in the water, bringing the mixture to a boil, then reduce heat to low.
- Cover the tajine and let it simmer for about 30 minutes, stirring occasionally.
- Add the potato chunks to the pot, ensuring they are submerged in the sauce.
- Cover again and continue to cook for another 30-40 minutes, or until the meat and potatoes are tender.
- Once cooked, sprinkle with fresh parsley before serving.
