  • Carrot - 1 medium, sliced
  • Tomato - 1 medium, chopped
  • Olive oil - 2 tablespoons
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Ground ginger - 1 teaspoon
  • Turmeric - 1/2 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - a handful, chopped
  • Water - 500 milliliters

Steps

  1. In a tajine or heavy pot, heat olive oil over medium heat.
  2. Add the chopped onion and minced garlic, sautéing until soft and translucent.
  3. Add the meat cubes to the pot, browning them on all sides.
  4. Stir in the ground cumin, coriander, ginger, turmeric, cinnamon, salt, and pepper, mixing well to coat the meat in the spices.
  5. Add the chopped tomato and sliced carrot, cooking for another 5 minutes.
  6. Pour in the water, bringing the mixture to a boil, then reduce heat to low.
  7. Cover the tajine and let it simmer for about 30 minutes, stirring occasionally.
  8. Add the potato chunks to the pot, ensuring they are submerged in the sauce.
  9. Cover again and continue to cook for another 30-40 minutes, or until the meat and potatoes are tender.
  10. Once cooked, sprinkle with fresh parsley before serving.
