- Onion - 1 medium, diced
- Garlic - 2 cloves, minced
- Carrot - 1 medium, sliced
- Bell pepper - 1 medium, diced
- Zucchini - 1 medium, diced
- Green olives - 100 grams, pitted and sliced
- Vegetable broth - 250 ml
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- Peel the potatoes and cut them into cubes. Set aside.
- In a tajine or a deep skillet, heat olive oil over medium heat. Add the diced onion and sauté until translucent.
- Add the minced garlic, sliced carrot, and diced bell pepper to the pan. Cook for about 5 minutes, stirring occasionally.
- Stir in the diced zucchini and continue cooking for another 5 minutes.
- Add the cubed potatoes, ground cumin, ground coriander, paprika, salt, and black pepper. Mix well to coat the potatoes with the spices.
- Pour in the vegetable broth, ensuring the potatoes are mostly submerged. Bring to a simmer.
- Cover the tajine or skillet and reduce the heat to low. Cook for about 25-30 minutes, or until the potatoes are tender.
- Add the sliced green olives in the last 5 minutes of cooking.
- Once cooked, garnish with fresh parsley before serving.
