Ingredients

  • Potatoes - 400 grams
  • Olive oil - 3 tablespoons
  • Onion - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, sliced
  • Bell pepper - 1 medium, diced
  • Zucchini - 1 medium, diced
  • Green olives - 100 grams, pitted and sliced
  • Vegetable broth - 250 ml
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. Peel the potatoes and cut them into cubes. Set aside.
  2. In a tajine or a deep skillet, heat olive oil over medium heat. Add the diced onion and sauté until translucent.
  3. Add the minced garlic, sliced carrot, and diced bell pepper to the pan. Cook for about 5 minutes, stirring occasionally.
  4. Stir in the diced zucchini and continue cooking for another 5 minutes.
  5. Add the cubed potatoes, ground cumin, ground coriander, paprika, salt, and black pepper. Mix well to coat the potatoes with the spices.
  6. Pour in the vegetable broth, ensuring the potatoes are mostly submerged. Bring to a simmer.
  7. Cover the tajine or skillet and reduce the heat to low. Cook for about 25-30 minutes, or until the potatoes are tender.
  8. Add the sliced green olives in the last 5 minutes of cooking.
  9. Once cooked, garnish with fresh parsley before serving.
