  • Ground cumin - 1 teaspoon

  • Honey - 2 tablespoons
  • Apples - 2 medium, peeled, cored, and sliced
  • Almonds - 50 grams, toasted and chopped
  • Fresh cilantro - a handful, chopped for garnish

Steps

  1. In a tajine or a large skillet, heat the olive oil over medium heat.
  2. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Stir in the minced garlic and cook for another minute until fragrant.
  4. Add the chicken thighs to the pan and season with cinnamon, ginger, cumin, salt, and black pepper.
  5. Sauté the chicken for about 5 minutes, browning it on all sides.
  6. Pour in the honey and add the sliced apples, stirring gently to combine.
  7. Cover the tajine and reduce the heat to low, allowing it to simmer for about 25-30 minutes, until the chicken is cooked through and tender.
  8. If desired, add a splash of water if the mixture becomes too dry during cooking.
  9. Once cooked, remove from heat and sprinkle with toasted almonds and fresh cilantro before serving.
