- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Vegetable broth - 100 ml
Steps
- Heat the olive oil in a tajine or a large skillet over medium heat.
- Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Stir in the minced garlic and cook for another minute, being careful not to burn it.
- Add the diced bell peppers and zucchini to the pan, stirring well to combine.
- Sprinkle the ground cumin, ground coriander, paprika, salt, and black pepper over the vegetables.
- Pour in the vegetable broth and mix everything thoroughly.
- Cover the tajine or skillet and let it simmer on low heat for about 15-20 minutes, until the vegetables are tender.
- Remove from heat and stir in the chopped parsley before serving.
