  • Zucchini - 1 medium
  • Garlic - 3 cloves, minced
  • Onion - 1 small, finely chopped
  • Olive oil - 2 tablespoons
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Vegetable broth - 100 ml

Steps

  1. Heat the olive oil in a tajine or a large skillet over medium heat.
  2. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  3. Stir in the minced garlic and cook for another minute, being careful not to burn it.
  4. Add the diced bell peppers and zucchini to the pan, stirring well to combine.
  5. Sprinkle the ground cumin, ground coriander, paprika, salt, and black pepper over the vegetables.
  6. Pour in the vegetable broth and mix everything thoroughly.
  7. Cover the tajine or skillet and let it simmer on low heat for about 15-20 minutes, until the vegetables are tender.
  8. Remove from heat and stir in the chopped parsley before serving.
