  • Chickpeas - 200 grams, cooked or canned, drained
  • Red onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Tomato - 1 medium, chopped
  • Olive oil - 2 tablespoons
  • Cumin - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Vegetable broth - 200 ml
  • Lemon - 1, juiced

Steps

  1. Heat the olive oil in a tajine or a large skillet over medium heat.
  2. Add the chopped red onion and sauté for about 5 minutes until soft and translucent.
  3. Stir in the minced garlic and cook for an additional minute until fragrant.
  4. Add the diced bell peppers and cook for 5-7 minutes until they start to soften.
  5. Stir in the chopped tomato, cooked chickpeas, cumin, cinnamon, paprika, salt, and black pepper.
  6. Pour in the vegetable broth and bring the mixture to a simmer.
  7. Cover the tajine or skillet and let it cook for about 15 minutes on low heat, allowing the flavors to meld.
  8. Remove from heat and stir in the lemon juice and chopped parsley.
  9. Serve warm with bread or over a bed of couscous.
