- Chickpeas - 200 grams, cooked or canned, drained
- Red onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Tomato - 1 medium, chopped
- Olive oil - 2 tablespoons
- Cumin - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Vegetable broth - 200 ml
- Lemon - 1, juiced
Steps
- Heat the olive oil in a tajine or a large skillet over medium heat.
- Add the chopped red onion and sauté for about 5 minutes until soft and translucent.
- Stir in the minced garlic and cook for an additional minute until fragrant.
- Add the diced bell peppers and cook for 5-7 minutes until they start to soften.
- Stir in the chopped tomato, cooked chickpeas, cumin, cinnamon, paprika, salt, and black pepper.
- Pour in the vegetable broth and bring the mixture to a simmer.
- Cover the tajine or skillet and let it cook for about 15 minutes on low heat, allowing the flavors to meld.
- Remove from heat and stir in the lemon juice and chopped parsley.
- Serve warm with bread or over a bed of couscous.
