Ingredients

  • White fish fillets (e.g., cod or haddock) - 300 grams
  • Green olives, pitted and sliced - 100 grams
  • Red bell pepper, sliced - 1 medium
  • Carrot, sliced - 1 medium
  • Onion, finely chopped - 1 medium
  • Garlic, minced - 2 cloves
  • Tomato, chopped - 1 medium
  • Fresh parsley, chopped - 2 tablespoons
  • Cilantro, chopped - 2 tablespoons
  • Lemon juice - 2 tablespoons
  • Olive oil - 2 tablespoons
  • Cumin powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Water - 250 milliliters

Steps

  1. In a large tajine or a deep skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until translucent.
  2. Add the sliced red bell pepper and carrot to the pan, cooking for an additional 5 minutes until slightly softened.
  3. Stir in the chopped tomato, cumin, paprika, salt, and black pepper. Cook for another 5 minutes, allowing the tomatoes to break down.
  4. Add the fish fillets to the vegetable mixture, gently pressing them into the sauce. Pour in the water and lemon juice.
  5. Reduce heat to low, cover, and let simmer for 15-20 minutes, or until the fish is cooked through and flakes easily with a fork.
  6. Once the fish is cooked, add the sliced olives, parsley, and cilantro. Stir gently to combine and heat through for another 5 minutes.
  7. Serve warm with crusty bread or over couscous to soak up the sauce.
