- White fish fillets (such as cod or haddock) - 300 grams
- Olive oil - 2 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Red bell pepper - 1, sliced
- Zucchini - 1 medium, chopped
- Tomatoes - 2 medium, diced
- Carrot - 1 medium, sliced
- Cilantro - 2 tablespoons, chopped
- Parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
- Ground cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Turmeric - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
- Water - 200 milliliters
Steps
- In a large tajine or heavy-bottomed pot, heat the olive oil over medium heat.
- Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic and cook for an additional minute until fragrant.
- Add the sliced red bell pepper, chopped zucchini, diced tomatoes, and sliced carrot. Cook for about 10 minutes, stirring occasionally.
- Sprinkle in the ground cumin, paprika, turmeric, salt, and black pepper, mixing well to coat the vegetables in the spices.
- Pour in the water and bring the mixture to a simmer. Cover the pot and let it cook for 10 minutes until the vegetables are tender.
- Gently place the fish fillets on top of the vegetable mixture, squeezing lemon juice over them. Cover the pot again and let it cook for another 10-15 minutes until the fish is cooked through and flakes easily.
- Remove from heat and sprinkle with chopped cilantro and parsley before serving.
