Ingredients

  • White fish fillets (such as cod or haddock) - 300 grams
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Red bell pepper - 1, sliced
  • Zucchini - 1 medium, chopped
  • Tomatoes - 2 medium, diced
  • Carrot - 1 medium, sliced
  • Cilantro - 2 tablespoons, chopped
  • Parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon
  • Ground cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Turmeric - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Water - 200 milliliters

Steps

  1. In a large tajine or heavy-bottomed pot, heat the olive oil over medium heat.
  2. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Stir in the minced garlic and cook for an additional minute until fragrant.
  4. Add the sliced red bell pepper, chopped zucchini, diced tomatoes, and sliced carrot. Cook for about 10 minutes, stirring occasionally.
  5. Sprinkle in the ground cumin, paprika, turmeric, salt, and black pepper, mixing well to coat the vegetables in the spices.
  6. Pour in the water and bring the mixture to a simmer. Cover the pot and let it cook for 10 minutes until the vegetables are tender.
  7. Gently place the fish fillets on top of the vegetable mixture, squeezing lemon juice over them. Cover the pot again and let it cook for another 10-15 minutes until the fish is cooked through and flakes easily.
  8. Remove from heat and sprinkle with chopped cilantro and parsley before serving.
