- Garlic - 2 cloves, minced
- Carrot - 1 medium, diced
- Zucchini - 1 medium, diced
- Bell pepper - 1 medium, diced
- Tomatoes - 2 medium, chopped
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - a handful, chopped
- Lemon - 1, for serving
Steps
- Heat the olive oil in a medium-sized pot over medium heat.
- Add the chopped onion and minced garlic, sautéing until the onion is translucent (about 5 minutes).
- Stir in the diced carrot, zucchini, and bell pepper, cooking for another 5 minutes until slightly softened.
- Add the chopped tomatoes, ground cumin, ground coriander, paprika, cinnamon, salt, and black pepper. Mix well and cook for an additional 5 minutes.
- Add the drained chickpeas to the pot, stirring to combine all ingredients, and allow to cook for another 10 minutes on low heat, stirring occasionally.
- Once cooked, remove from heat and stir in the chopped parsley.
- Serve warm with lemon wedges on the side for squeezing over the dish.
