  • Canned chickpeas - 400 grams, drained and rinsed
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Zucchini - 1 medium, diced
  • Bell pepper - 1 medium, diced
  • Tomatoes - 2 medium, chopped
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - a handful, chopped
  • Lemon - 1, for serving

Steps

  1. Heat the olive oil in a medium-sized pot over medium heat.
  2. Add the chopped onion and minced garlic, sautéing until the onion is translucent (about 5 minutes).
  3. Stir in the diced carrot, zucchini, and bell pepper, cooking for another 5 minutes until slightly softened.
  4. Add the chopped tomatoes, ground cumin, ground coriander, paprika, cinnamon, salt, and black pepper. Mix well and cook for an additional 5 minutes.
  5. Add the drained chickpeas to the pot, stirring to combine all ingredients, and allow to cook for another 10 minutes on low heat, stirring occasionally.
  6. Once cooked, remove from heat and stir in the chopped parsley.
  7. Serve warm with lemon wedges on the side for squeezing over the dish.
