  • Coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Cilantro - 2 tablespoons, chopped (for garnish)

Steps

  1. In a large skillet or tajine, heat the olive oil over medium heat.
  2. Add the chopped onion and minced garlic, sautéing until the onion becomes translucent, about 5 minutes.
  3. Stir in the sliced carrot, diced zucchini, and diced bell pepper, cooking for an additional 5 minutes until the vegetables begin to soften.
  4. Add the chopped tomato, cooked chickpeas, vegetable broth, cumin, coriander, paprika, cinnamon, salt, and black pepper.
  5. Bring the mixture to a gentle simmer, then reduce the heat to low, cover, and let it cook for 15-20 minutes, stirring occasionally.
