Ingredients

  • Olive oil - 2 tablespoons
  • Red onion - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, sliced
  • Zucchini - 1 medium, diced
  • Red bell pepper - 1 medium, diced
  • Chickpeas - 200 grams, cooked
  • Cinnamon - 1/2 teaspoon
  • Cumin - 1 teaspoon
  • Coriander - 1 teaspoon
  • Paprika - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Vegetable broth - 250 ml
  • Pistachios - 50 grams, shelled and chopped
  • Fresh cilantro - a handful, chopped

Steps

  1. Heat the olive oil in a tajine or a heavy-bottomed pot over medium heat.
  2. Add the diced red onion and minced garlic; sauté until the onion becomes translucent.
  3. Stir in the sliced carrot, diced zucchini, and diced red bell pepper, cooking for about 5 minutes until they begin to soften.
  4. Add the cooked chickpeas, cinnamon, cumin, coriander, paprika, salt, and black pepper; mix well to combine all the spices with the vegetables.
  5. Pour in the vegetable broth, bring the mixture to a simmer, then cover and cook for 15 minutes on low heat to allow the flavors to meld.
  6. Once cooked, stir in the chopped pistachios and fresh cilantro just before serving.
  7. Serve warm, garnished with additional pistachios and cilantro if desired.
