- Olive oil - 2 tablespoons
- Red onion - 1 medium, diced
- Garlic - 2 cloves, minced
- Carrot - 1 medium, sliced
- Zucchini - 1 medium, diced
- Red bell pepper - 1 medium, diced
- Chickpeas - 200 grams, cooked
- Cinnamon - 1/2 teaspoon
- Cumin - 1 teaspoon
- Coriander - 1 teaspoon
- Paprika - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
- Vegetable broth - 250 ml
- Pistachios - 50 grams, shelled and chopped
- Fresh cilantro - a handful, chopped
Steps
- Heat the olive oil in a tajine or a heavy-bottomed pot over medium heat.
- Add the diced red onion and minced garlic; sauté until the onion becomes translucent.
- Stir in the sliced carrot, diced zucchini, and diced red bell pepper, cooking for about 5 minutes until they begin to soften.
- Add the cooked chickpeas, cinnamon, cumin, coriander, paprika, salt, and black pepper; mix well to combine all the spices with the vegetables.
- Pour in the vegetable broth, bring the mixture to a simmer, then cover and cook for 15 minutes on low heat to allow the flavors to meld.
- Once cooked, stir in the chopped pistachios and fresh cilantro just before serving.
- Serve warm, garnished with additional pistachios and cilantro if desired.
