Ingredients

  • Guinea fowl - 400 grams, cut into pieces
  • Olive oil - 3 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, sliced
  • Zucchini - 1 medium, sliced
  • Red bell pepper - 1 medium, chopped
  • Preserved lemon - 1, rinsed and chopped
  • Green olives - 100 grams, pitted
  • Cilantro - 1/4 cup, chopped
  • Cumin powder - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Water - 250 milliliters

Steps

  1. Heat olive oil in a tajine or a heavy-bottomed pot over medium heat.
  2. Add the chopped onion and garlic; sauté until softened, about 5 minutes.
  3. Add the guinea fowl pieces, browning them on all sides for about 10 minutes.
  4. Stir in the cumin, cinnamon, paprika, salt, and black pepper, mixing well to coat the meat.
  5. Add the sliced carrot, zucchini, and red bell pepper to the pot.
  6. Pour in the water and bring to a simmer. Cover with a lid and reduce heat to low.
  7. Cook for 45 minutes, stirring occasionally, until the meat is tender.
  8. Add the preserved lemon, green olives, and chopped cilantro to the pot, stirring gently.
  9. Cover again and cook for an additional 10-15 minutes to meld the flavors.
  10. Remove from heat and let sit for 5 minutes before serving.
