  • Light purple peppers - 200 grams
  • Zucchini - 150 grams, chopped
  • Carrots - 100 grams, sliced
  • Chickpeas - 150 grams, cooked
  • Red onion - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Cumin - 1 teaspoon
  • Coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Turmeric - 1/2 teaspoon
  • Olive oil - 2 tablespoons
  • Vegetable broth - 250 milliliters
  • Salt - to taste
  • Black pepper - to taste
  • Fresh cilantro - for garnish

Steps

  1. Heat olive oil in a tajine or a heavy-bottomed pot over medium heat.
  2. Add diced red onion and minced garlic, sauté until translucent, about 3-4 minutes.
  3. Stir in sliced carrots and chopped zucchini, cooking for another 5 minutes until they start to soften.
  4. Add the light purple peppers, cooked chickpeas, cumin, coriander, paprika, turmeric, salt, and black pepper. Stir well to combine.
  5. Pour in the vegetable broth and bring to a simmer.
  6. Cover and reduce heat to low, cooking for 20-25 minutes until the vegetables are tender.
  7. Remove from heat and let it rest for a few minutes.
  8. Serve warm, garnished with fresh cilantro.
