- Zucchini - 150 grams, chopped
- Carrots - 100 grams, sliced
- Chickpeas - 150 grams, cooked
- Red onion - 1 medium, diced
- Garlic - 2 cloves, minced
- Cumin - 1 teaspoon
- Coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Turmeric - 1/2 teaspoon
- Olive oil - 2 tablespoons
- Vegetable broth - 250 milliliters
- Salt - to taste
- Black pepper - to taste
- Fresh cilantro - for garnish
Steps
- Heat olive oil in a tajine or a heavy-bottomed pot over medium heat.
- Add diced red onion and minced garlic, sauté until translucent, about 3-4 minutes.
- Stir in sliced carrots and chopped zucchini, cooking for another 5 minutes until they start to soften.
- Add the light purple peppers, cooked chickpeas, cumin, coriander, paprika, turmeric, salt, and black pepper. Stir well to combine.
- Pour in the vegetable broth and bring to a simmer.
- Cover and reduce heat to low, cooking for 20-25 minutes until the vegetables are tender.
- Remove from heat and let it rest for a few minutes.
- Serve warm, garnished with fresh cilantro.
