  • Chickpeas (canned) - 400 grams, drained and rinsed
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Tomato - 1 medium, diced
  • Olive oil - 2 tablespoons
  • Cumin - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Vegetable broth - 250 ml
  • Lemon - 1, juiced

Steps

  1. Heat the olive oil in a tajine or a medium pot over medium heat.
  2. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Stir in the minced garlic, cumin, cinnamon, and paprika, cooking for another minute until fragrant.
  4. Add the diced purple bell peppers and zucchini to the pot, stirring to combine with the spices.
  5. Pour in the vegetable broth and bring to a simmer. Cover and cook for 10 minutes until the vegetables are tender.
  6. Stir in the diced tomato and drained chickpeas, cooking for an additional 5 minutes to heat through.
  7. Season with salt, black pepper, and fresh lemon juice. Remove from heat.
  8. Garnish with chopped parsley before serving.
