- Paprika - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Cinnamon - 1/4 teaspoon
- Olive oil - 2 tablespoons
- Vegetable broth - 250 ml
- Chickpeas - 200 grams, cooked
- Fresh cilantro - 2 tablespoons, chopped
- Salt - to taste
- Black pepper - to taste
Steps
- Heat the olive oil in a tajine or a heavy-bottomed pot over medium heat.
- Add the chopped red onion and garlic, sautéing until translucent, about 3-4 minutes.
- Stir in the cumin, coriander, paprika, turmeric, and cinnamon, cooking for an additional minute until fragrant.
- Add the diced green bell peppers, zucchini, and sliced carrot to the pot, stirring well to coat with the spices.
- Pour in the vegetable broth, and season with salt and black pepper to taste.
- Bring to a gentle boil, then reduce heat to low, cover, and let simmer for 15-20 minutes until the vegetables are tender.
- Fold in the cooked chickpeas and chopped cilantro, cooking for another 5 minutes to heat through.
- Serve hot, garnished with additional cilantro if desired.
