  • Garlic - 3 cloves, minced
  • Canned chickpeas - 240 grams, drained and rinsed
  • Tomato paste - 2 tablespoons
  • Olive oil - 2 tablespoons
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Turmeric - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Vegetable broth - 250 ml
  • Fresh cilantro - 2 tablespoons, chopped for garnish

Steps

  1. In a large tajine or skillet, heat the olive oil over medium heat.
  2. Add the chopped onion and garlic, sautéing until the onion is translucent, about 5 minutes.
  3. Stir in the sliced green bell peppers, diced zucchini, and diced carrot, cooking for another 5-7 minutes until they begin to soften.
  4. Add the ground cumin, ground coriander, paprika, turmeric, salt, and black pepper, stirring well to coat the vegetables in the spices.
  5. Mix in the tomato paste and cook for an additional 2 minutes.
  6. Add the canned chickpeas and vegetable broth to the pan, then bring the mixture to a gentle simmer.
  7. Cover the tajine or skillet and let it cook for 10-15 minutes until the vegetables are tender and the flavors meld together.
  8. Remove from heat and garnish with fresh cilantro before serving.
