- Canned chickpeas - 240 grams, drained and rinsed
- Tomato paste - 2 tablespoons
- Olive oil - 2 tablespoons
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Turmeric - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Vegetable broth - 250 ml
- Fresh cilantro - 2 tablespoons, chopped for garnish
Steps
- In a large tajine or skillet, heat the olive oil over medium heat.
- Add the chopped onion and garlic, sautéing until the onion is translucent, about 5 minutes.
- Stir in the sliced green bell peppers, diced zucchini, and diced carrot, cooking for another 5-7 minutes until they begin to soften.
- Add the ground cumin, ground coriander, paprika, turmeric, salt, and black pepper, stirring well to coat the vegetables in the spices.
- Mix in the tomato paste and cook for an additional 2 minutes.
- Add the canned chickpeas and vegetable broth to the pan, then bring the mixture to a gentle simmer.
- Cover the tajine or skillet and let it cook for 10-15 minutes until the vegetables are tender and the flavors meld together.
- Remove from heat and garnish with fresh cilantro before serving.
