  • Canned chickpeas - 240 grams, drained and rinsed
  • Tomato paste - 2 tablespoons
  • Cumin - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Olive oil - 2 tablespoons
  • Vegetable broth - 300 milliliters
  • Salt - to taste
  • Black pepper - to taste
  • Fresh cilantro - for garnish

Steps

  1. Heat olive oil in a large tajine or skillet over medium heat.
  2. Add the chopped onion and minced garlic, sautéing until the onion is translucent, about 5 minutes.
  3. Stir in the diced dark red bell peppers, sliced zucchini, and carrot. Cook for another 5-7 minutes until the vegetables soften.
  4. Add the canned chickpeas, tomato paste, cumin, cinnamon, and paprika. Stir well to combine all ingredients.
  5. Pour in the vegetable broth and season with salt and black pepper to taste.
  6. Cover the tajine or skillet and let it simmer on low heat for about 20 minutes, stirring occasionally.
