- Canned chickpeas - 240 grams, drained and rinsed
- Tomato paste - 2 tablespoons
- Cumin - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Paprika - 1 teaspoon
- Olive oil - 2 tablespoons
- Vegetable broth - 300 milliliters
- Salt - to taste
- Black pepper - to taste
- Fresh cilantro - for garnish
Steps
- Heat olive oil in a large tajine or skillet over medium heat.
- Add the chopped onion and minced garlic, sautéing until the onion is translucent, about 5 minutes.
- Stir in the diced dark red bell peppers, sliced zucchini, and carrot. Cook for another 5-7 minutes until the vegetables soften.
- Add the canned chickpeas, tomato paste, cumin, cinnamon, and paprika. Stir well to combine all ingredients.
- Pour in the vegetable broth and season with salt and black pepper to taste.
- Cover the tajine or skillet and let it simmer on low heat for about 20 minutes, stirring occasionally.
- Once the vegetables are tender and the flavors melded, remove from heat.
