Ingredients

  • Red bell peppers - 2 large
  • Onion - 1 medium, finely chopped
  • Garlic - 3 cloves, minced
  • Olive oil - 2 tablespoons
  • Cumin - 1 teaspoon
  • Coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Chickpeas - 200 grams, cooked
  • Vegetable broth - 250 ml
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Cut the red bell peppers in half, remove seeds, and place them cut side down on a baking sheet. Roast for 20 minutes or until the skin is blistered.
  3. While the peppers are roasting, heat olive oil in a tajine or a large skillet over medium heat.
  4. Add chopped onion and sauté for 5 minutes until translucent. Stir in minced garlic and cook for an additional 1-2 minutes.
  5. Add cumin, coriander, paprika, cinnamon, salt, and black pepper to the onion mixture. Stir well and cook for another 2 minutes to toast the spices.
  6. Once the peppers are done roasting, remove them from the oven, let them cool slightly, and peel the skin off.
  7. Chop the roasted bell peppers and add them to the skillet with the onion and spices. Stir in the cooked chickpeas and vegetable broth.
  8. Bring the mixture to a simmer and cook for 10 minutes, allowing the flavors to meld.
  9. Garnish with fresh parsley before serving.
