- Red bell peppers - 2 large
- Onion - 1 medium, finely chopped
- Garlic - 3 cloves, minced
- Olive oil - 2 tablespoons
- Cumin - 1 teaspoon
- Coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Chickpeas - 200 grams, cooked
- Vegetable broth - 250 ml
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- Preheat the oven to 200°C (400°F).
- Cut the red bell peppers in half, remove seeds, and place them cut side down on a baking sheet. Roast for 20 minutes or until the skin is blistered.
- While the peppers are roasting, heat olive oil in a tajine or a large skillet over medium heat.
- Add chopped onion and sauté for 5 minutes until translucent. Stir in minced garlic and cook for an additional 1-2 minutes.
- Add cumin, coriander, paprika, cinnamon, salt, and black pepper to the onion mixture. Stir well and cook for another 2 minutes to toast the spices.
- Once the peppers are done roasting, remove them from the oven, let them cool slightly, and peel the skin off.
- Chop the roasted bell peppers and add them to the skillet with the onion and spices. Stir in the cooked chickpeas and vegetable broth.
- Bring the mixture to a simmer and cook for 10 minutes, allowing the flavors to meld.
- Garnish with fresh parsley before serving.
