Ingredients

  • Red bell pepper - 2 medium
  • Zucchini - 1 medium, diced
  • Carrot - 1 medium, diced
  • Chickpeas - 200 grams, cooked
  • Tomato - 1 large, chopped
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Cumin - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Place the red bell peppers on a baking tray and roast them in the oven for about 20 minutes, turning occasionally until the skins are charred and blistered.
  3. Remove the peppers from the oven, place them in a bowl, and cover with plastic wrap for 10 minutes to steam.
  4. Once cooled, peel off the skins, remove the seeds, and slice the peppers into strips.
  5. In a medium saucepan, heat the olive oil over medium heat and sauté the chopped onion and minced garlic until they are translucent, about 5 minutes.
  6. Add the diced carrot and zucchini to the pan and cook for another 5 minutes until slightly softened.
  7. Stir in the roasted red pepper strips, chopped tomato, cooked chickpeas, cumin, cinnamon, paprika, salt, and black pepper. Mix well to combine.
  8. Cover the saucepan and let the mixture simmer for 15 minutes, stirring occasionally.
  9. Remove from heat, stir in the chopped parsley and lemon juice, and adjust seasoning if necessary.
  10. Serve warm, garnished with additional parsley if desired.
