Ingredients
- Red bell pepper - 2 medium
- Zucchini - 1 medium, diced
- Carrot - 1 medium, diced
- Chickpeas - 200 grams, cooked
- Tomato - 1 large, chopped
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Cumin - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
Steps
- Preheat the oven to 200°C (400°F).
- Place the red bell peppers on a baking tray and roast them in the oven for about 20 minutes, turning occasionally until the skins are charred and blistered.
- Remove the peppers from the oven, place them in a bowl, and cover with plastic wrap for 10 minutes to steam.
- Once cooled, peel off the skins, remove the seeds, and slice the peppers into strips.
- In a medium saucepan, heat the olive oil over medium heat and sauté the chopped onion and minced garlic until they are translucent, about 5 minutes.
- Add the diced carrot and zucchini to the pan and cook for another 5 minutes until slightly softened.
- Stir in the roasted red pepper strips, chopped tomato, cooked chickpeas, cumin, cinnamon, paprika, salt, and black pepper. Mix well to combine.
- Cover the saucepan and let the mixture simmer for 15 minutes, stirring occasionally.
- Remove from heat, stir in the chopped parsley and lemon juice, and adjust seasoning if necessary.
- Serve warm, garnished with additional parsley if desired.
