- Yellow bell pepper - 1 large, diced
- Tomatoes - 2 medium, chopped
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Chickpeas - 200 grams, cooked
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
- Water - 150 milliliters
Steps
- Heat the olive oil in a medium-sized tajine or a heavy-bottomed pot over medium heat.
- Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic and cook for an additional minute until fragrant.
- Add the diced red and yellow bell peppers, cooking for about 7 minutes until they soften.
- Stir in the chopped tomatoes, then add the ground cumin, ground coriander, paprika, salt, and black pepper. Mix well.
- Pour in the water and bring to a gentle simmer. Cover and let it cook for about 10 minutes, stirring occasionally.
- Add the cooked chickpeas and mix well, allowing them to heat through for about 5 minutes.
- Remove from heat, stir in the lemon juice and chopped parsley.
- Serve warm, garnished with extra parsley if desired.
